And the winter continues.
Spring is coming, I’m sure. But after being pummeled with 75cm (29.5″) in one storm last week and another 45cm two days later, I am feeling the winter blues again! Now I will say that since the storms it has melted significantly but I’ll take any excuse to make a little comfort food!
I saw this recipe for tomato tortellini soup from Chelsea Haga from galonamission.com while surfing through Pinterest and it legit made me drool. I waited ever so patiently for a day off and went to town with this recipe! This soup is so easy to make, you don’t need a whole day to make it. But what a waste it would be to make the house smell SO good and then leave for the day?!
The great thing about soup recipes is that you can tailor it to your tastes! Little more of this, little less of that and voila! An amazing recipe! I didn’t follow the recipe exactly, more, used it to fuel my creativity! I added a lot more onion, cream and cheese (all of my favorite things!) and held back on the tomatoes, rosemary and broth.
Keep it in 500ml mason jars in the freezer for quick and easy lunches on the go! Or even better- use some of Bulk Barn’s reusable glass jars to keep it safe! Having made almost 4L of soup I figured it would last me a few weeks. Turns out hubby liked it. So it lasted two days. Oh well.
