As summer came last year, we packed away our slow cooker when we realized we weren’t using it very much. Although you can use them all year long, I prefer to use slow cooking to make soup, pulled pork and roasts. And we don’t often enjoy in the summer.
Long story short we are halfway through winter and we haven’t touched our slow cooker yet. Which is strange because I am all for lazy cooking!
While on a search for a new slow cooking recipe there was something I noticed; Most of the yummy-looking recipes for slow cookers require that I be home while it was cooking. Like, sorry, if I had 8 hours to cook a meal I’d be making a turkey dinner every day! I don’t have time to sit at home and stir these recipes every hour.
I found an amazing looking recipe online for honey garlic chicken and got all of the ingredients. The morning I was going to make the recipe we were just coming out of a massive ice storm and had only just gotten our power back. ‘Perfect’ I thought, “What a great day for a slow cooker meal! Then I noticed the reviews for the recipe I had chosen. They were horrible. Now I was at home, with all of the ingredients for this recipe and most of the city was shut down.
Time for some improvisation.
Slow Cooker Chicken Noodle Bake
I looked up a few recipes online to see what the average cooking temperature for chicken in slow cookers was and worked backward from there. Put the chicken breasts in the slow cooker with two cans of cream of mushroom soup. Load it up with all the veggies you love! Carrots, onions and green beans were my choice. Cook on low for 6 hours and it will be perfect. Throw some pasta into the slow cooker until it’s warm all of the way through and you’ve got yourself a great meal!
